So I got home from school and could not decide what i wanted for dinner so I headed to the grocery store where I found acorn squash on sale for 75 cents, so of course I bought it.
After a little googling I decided to make a roasted stuffed squash.
Start by slicing the squash in half
then clean out the seeds and guts
rub with a little olive oil and season with salt, pepper, cayenne, garlic and put in the oven for 25 minutes at 350
While the squash was roasting away I got out one of my dad’s lentil burgers and cooked it up then crumbled it.
While ALL THAT was cooking I got out some salsa, hot sauce and goats cheese and mixed it up with the crumbled lentil burger.
Then I put the lentil and cheese mixture into half the roasted squash and put the whole thing back into the oven for a few more minutes to bake a little more.
Doesn’t it look fantastic?
I devoured the whole thing! Plus I have 1/2 a squash to eat at a later date.
